Crisp batter for Fish.

I have used this recipe for years. It makes a crisp brown batter and is perfect for fish. The secret is to have a thin batter and to cook in hot oil. I use Rice Bran oil as it has no flavor and can be heated to a high temperature without burning.
200g plain flour
1 teaspoon of Carb soda
1 teaspoon of salt 1/2 teaspoon of white pepper
300/310 mls of cold water or soda water.
Place all in TMX bowl and mix for 10 seconds / speed 5.
Pour into a flat dish and keep in fridge for 30 mins
Dust fish with flour, dip into batter and fry in hot oil.
Remove when cooked on both sides, and place on hand towel.
To test that oil is hot enough, drop a small blob of batter into hot oil. It should sizzle immediately.
Chips.
Cut chips to required size.
Microwave and then cool
Heat oil until very hot, ( I use a WOK )
Cook chips until brown and crisp. Don't turn until first side is brown.
Drain on hand towel

Thankyou for a great recipe Chookie, made this tonight and it was wonderful. Very light and crispy, will definitely be making it like this all the time now.
