Hi, I'm hoping someone, more of a baking goddess than moi, will be able to help me.

I would like to make a batch of these as cupcakes to take to work on Monday. However, I would also like to have a couple to give to the babysitter for the Saturday night before the Monday. So my question is: can I cook and ice these cupcakes on Saturday and they will still be good for eating on Monday morning at work? If yes, should these be kept in an airtight container in fridge?
Alternatively, would it be better for me to bake the cupcakes and make the vanilla frosting on Saturday. Ice a few on Saturday for the babysitter and then ice the ones for Monday on Sunday night?

All suggestions/advice most gratefully welcomed. Thanks  :)

MEP I made a batch of these on Monday and iced them all with the frosting on Monday evening and they have been in a sealed container  and the kids have been taking one to school each day and they say they are still great. They certainly still look good.

I'm so glad you asked this question MEP, I will be waiting for replies with interest too.

I am baking for a charity fundraiser next week and wanted to know how far in advance I could make the cupcakes ;D

A couple of days in an airtight container, and they will be fine  ;)
This icing keeps really well for a few days actually, and the cake will still be fresh....not that they usually hang around that long, but I have kept some aside before.
Make  sure you post a pic  ;)

Hally, have you frozen the creamy vanilla frosting? I was wondering how that would go. I freeze carrot cake with the cream cheese frosting but was worried about the vanilla frosting.

I have frozen chocolate butter icing, is this one different?

Yeah it has quite a different consistency to buttercream icing and is quite shiny, I'm not convinced it would come back after freezing. BTW when you freeze cup cakes that have already been iced do you freeze them and then wrap? That's what I did with my banana cakes but I had to then unwrap before desfrosting so the warpping didn't ruin the icing.

No wrapping just put them in a tupperware container & normally take out 2 at a time for ds.

Thanks so much for your advice everyone. To clarify, Wonder and  Maddy, did you keep the iced cupcakes in an airtight container in the fridge or just at room temperature?

Hally, how do you defrost the frozen cupcakes? I do very little freezing to be honest as I don't like the taste of freezer burns.

MEP, we just have them on the kitchen bench where the kids remember we have them, once anything is out of sight in my house it doesn't get eaten. They are still eating the cakes today that were made on Monday and DS is even happy to give one to his best friend at school so he must think they still taste good.

I was worried about the icing being out of the fridge but we only ever keep our butter in the cupboard so the only concern may be the milk but it still seems fine. To be honest I did put a few in the fridge that didn't fit in the container, and the icing didn't stay as nice and shiny as on the others and the colour almost looked like it had split a little.

Mep, just a container not in the fridge, or I have mine sitting in a domed server like the cafes, on the bench.
I only put them in the fridge if there's whipped cream on them....I don't even fridge them if there's cream cheese icing (unless it's summer time)....and they're fine.
honestly, I don't like them in the fridge, it think it dries them out....and I never freeze them, particularly iced....I think the flavour and texture suffers, for my taste any way.
I really don't like freezing/or putting left over icing in the fridge....I would prefer a fresh lot instead, just the way I am I guess  ;)

if you have kids....they never last long anyway  ;)
