Hi everyone. I have a challenge from a customer and I really need some assistance, please. I will give you the clues that have been given to me.
The lady concerned went for a holiday in Sydney and had a memorable meal at the Pekin Inn in Pymble, Sydney.
She must have had a banquet because she listed off several dishes that she could remember, including Mermaid's Tresses and Crysanthemum Fish, but the one she wants me to find a recipe for, to convert for the Thermomix, she can't remember the name of!!
She describes it thus - a sort of filo pastry, which was flaky and high. The waitress cut the bun/dumpling in half and stuffed the inside with "something like" San Choy Bow.
Does this ring a bell with anyone, please? I would love to make someone happy, but I feel it's a tall order. Worth a try, though.
