I made this again on Saturday, and Yum.. My favourite now..
My Thermomix,  Kitchen Aid, Pizza oven, Nu Wave 5 in 1, Spatulas, all brings love, laughter, happiness, and great food  to my kitchen.

Made this today and it is YUM.  Might add just a tad more gelatine next time as it was a little bit "sloppy"  Will certainly be making it again.

I made this before CC came out to Australia last August but this, along with some lamingtons, never got to see the light of day for my special guest.  I thought I had reviewed it but I obviously forgot to click on 'post'.   The main reason for coming back on here is to say that tonight I had a piece thawed and it was still as good as the day I made it. Very handy to be able to make desserts ahead of time and freeze individual portions for a quick dessert for unexpected visitors.

I love the sound of this but have lots of fresh pineapple to use up. Can someone tell me approx. how much pineapple juice I would need to add to the gelatin. I will then crush some fresh pineapple and get the juice that way.

I made a strawberry version of this during the week to have as dessert with some friends.  I stewed a punnet of strawberries in a little water and then just followed the recipe as normal.  I wasn't sure how much juice is in a can of pineapple so just used half a cup of the cooking liquid.

I sliced it up and put it in the freezer and it thawed out nicely.

Thanks for bringing this to our attention and the conversion; back when cheesecakes first became popular this one and a lemon one seemed to be served at every kitchen tea that was held. The strawberry version sounds great. They would be both good for all the "bring a plates" at the end of the year.
