Jam didn't set.
« on: September 09, 2012, 02:02:21 am »
Hi every one, beautiful Sunday morning in Perth ;-) I made pineapple jam the other night, tastes lovely but didn't set. I was my first go at Jam so not that surprised. Should I a)add pectin and cook it again, b) cook it for longer c) throw it out d) something else?
Also why I have you :-) how do people clean their Thermomix silpat mat?, its quite unwieldy I find :-)  wondering how others do it?
thank you, now that I've broken the ice I probably be on all the time with questions questions questions :-)

Which recipe did you use for the jam adele?

I just rinse my silpat mat in warm soapy water or sometimes it just needs a quick wipe over with a damp cloth.

No worries with asking questions, that's what we are here for.

Hi Adele, Do you have any lemon juice, that helps set jam. Also there is a product called jamsetta in supermarkets.

I made jam from the recipe in the EDC all the time.

Hi there Adele, I don't have the success with Jam in the TMX like I used to have the old fashion way, I find I have to add Jamsetta.  Also I think that Pineapple has a lot of acid and is hard to get to set anyway.   I would cook it again with the Jamsetta.

Thanks guys, I'm going to experiment :-) one jar I'll add jam setter, the other I may add bannana (I've seen a recipe for bannana and pineapple jam) so I'll try both ways and see which one works best. I'll let you know :-).

and I solved my silmat problem which was really a difficulty getting it dry, rather than washing. I hung it over the oven thingy I normally hang the tea towells :-/  not so hard really.

AB,  is correct.  Pineapple jam is difficult to set.  I would add Jam Setta and go for a mix that hasn't much liquid.

I'm not sure about the size of the silpat mat but when I am drying my silicon pastry mat I simply place it flat on my tea towel then roll the tea towel like a jam roll so that it covers both the back and front of the mat, then roll it a couple of times with my hands as though I was rolling out pastry or bread dough and that generally is enough to dry it thoroughly.

I wash mine in the sink,  rinse it and hang over tap to drain then into pantry where there is another tap and leave it there.  Love the idea of rolling it in a TT.  Thanks for that tip.
