We have had our first full crop of Meyer Lemons. I have been looking for different ways of preserving this beautiful fruit. I have been using my dehydrator lately so thought I would dry some lemons and then grind them into powder in the TMX.
I sliced 8 lemons as thin as possible, and then dried them. This took all day. I ended up with 100g of powder. It has an intense lemon flavor and could replace zest in a recipe. Could be added to meringues or cream in a sponge. Shortbread biscuits or coconut biscuits. Sugar could be added for an icing and i could go on and on.

NOTES
Make sure that you grind it as fine as possible, to powder.
When used in cooking, grind again with other dry ingredients. Example, with rice flour to make Lemon Pepper, add pepper later.
In custard, grind with sug. And cornflour, before adding milk and eggs. ( to 500mls. Of milk, need 4 teaspoons, or more for a strong flavour.

Chookie, looks great, I've been given stacks of oranges and lemons, will have to get the dehydrator out.

Chookie...what's the difference with a Meyer lemon, compared to I guess a regular lemon?

Maddy, they are not as' lemony,' if that makes sense. You could easily sub any citrus fruit in this recipe.
We can't grow real lemons or oranges easily because it is so cold here.

Chookie this looks amazing. We had a Meyer lemon at our other house and it was wonderful. The one we have here is a dwarf and isn't as good, but it is covered in blossom at the moment.

This is a great idea Chookie, so easy to use and so many uses. Added to pepper to make lemon pepper.

Chookie thanks. My olds next door have a meyer lemon tree, when it fruits we get weekly supplies, shoudnt be too far away it was flowering last week. I love meyer lemons, so much better than normal lemons & so juicy.

Did you leave the seeds in Chookie? It looks like Uni has taken her seeds out. How much of a difference do you think this would make to the end taste?
