The thin and Crispy base is the one I love.  I just double it and place everything in bowl and knead for 2 mins. I use 3 heaped teaspoons of dried yeast to the double mixture.  This makes 6 medium sized bases. DH and I share 1 pizza.

Last night I adapted Pete Evans pizza base. DH enjoyed it, but thought Travellers pizza base from taste is his favourite. I have made 4 different bases so far, friends really love the Pete Evans one. Last night I also used whey instead of water - just to use it up.
I will post that one - travellers I have adjusted to suit the TM, but forget to write down. So next time, I will be more careful.

Pete Evans Pizza Base.Makes 4 bases

250mls luke warm water or whey heated on 37degrees for one minute
2 teas yeast
1 and 1/4 teas sugar
1 and 1/2 tabs olive oil
475 g strong flour
1 and 1/4 teas salt

Place all ingredients in TM bowl. Mix togetheron 6 for 5 secs. Then  turn TM to closed lid position,  :: for 4 mins.
Take dough out of TM bowl and knead lightly together.
Lightly grease a bowl, and place dough in and allow to double for approx 45 - 60 mins. OR divide into four and freeze portions that aren't required. I froze 3 of them in individual clip lock bags.
When using frozen dough, take out allow to thaw and use as normal.
When using the dough, roll out to a 12 inch base.
Cover and leave to prove for 15 mins before using.

I make the one from the EDC book, its easy, and works.

I chose this one for my first batch of electric pizzas - previously I only managed to get 3 pizzas from it but I made sure the dough proved well this morning and quite easily got 4 from this recipe.  Coolish day here so the first rise took 1.5 hours and once I had made the 4 balls, I put them covered in a 40oC oven for 10 minutes which gave me nice sized balls of dough to work with.

Excelent news Judy.  I don't think I've tried the EDC version yet.  I usually make the Jamie O ones when making my own dough.  :)

Another vote for the Thin and Crispy base, I'd have posted last night but the forum was down for a bit.
