I'm so pleased your family liked it! I was a bit hesitant in my naming of it as a 'risotto' (hence the quotations) as it doesn't really fit a typical risotto in my book...except for the fact that it has rice :D

Jamberie - thank you for this one!!  Made it tonight - would you believe I only had 5 gm of butter in the fridge ;D - so used that and probably a tablespoon and a half of olive oil.  Didn't have frozen peas so added some chopped zucchini and  broccoli along with the basil.  DSWHL (dear son with hollow legs)announced it an absolute winner!!  Served with large salad.  Added to the hallowed book of family favourites!!  Thanks, again!!:D :D

It is always a crowd pleaser here and whenever I've served it to guests they never leave without the recipe!
 
I've never added broccoli to it before, I might try that too :) Even a small amount of butter adds to the flavour, but I'm often out of butter too so I substitute for whatever oil or margarine I have at the time.

I had enough leftovers for lunch again today (3rd day in a row) so thought I'd try and make it look a bit different to fool DH.
Cooked some pasta, added it to the risotto mix, had a frozen pack of cheese sauce so thawed that and poured it over the top.  Topped with breadcrumbs and cheese and stuck it under the grill.  Yum, loved it.

I've had this on my To-Make list for ages and I am so pleased I finally got round to it! So yummy! I made it, put it in my thermoserver and took it on a 10 minute walk to my friend who had just been admitted to hospital. It smelt so good, I think we made all the nurses and other patients pea green with envy!

A great recipe, and as the patient was a pea-hater, I substituted frozen corn which worked just as well. A big hit at home, and at the hospital! This recipe is a keeper!

It is our family's go-to meal which always pleases & it is a good TMX mince recipe too.

Judy- I love the creative use of left overs
AnnoyedThyroid- yes, it does smell divine & would be much preferred over hospital food!

Yum...this is delicious.
I didn't have peas so used frozen corn instead, and the gourmet gardens tube I thought was basil was actually basil,oregano, garlic and bell pepper, so used that- yummo!
DH had had Maccas while he was out, so was not hungry, but tried a bit...then a bit more...then a bit more! Then said "that stuff is gooooooooooooooood, has so much flavour."  :D
3 girls ate theirs all up then just sat, said they had full happy tummies!  :D
I had mine on a fresh homemade bun with cheese and salad...yum.  :D

LOL Astarra! It's a great 'base'of a recipe where substitutions are happily accepted! That is why it is a weekly meal at our place!

This is very similar to a Bolegnese Risotto we cook in the pressure cooker so might ahve to give it a try in the TMX. Can I ask what type of texture the mince ends up? I normally don't like the texture of TMX cooked mince.
