Chris's Carrot Cake

Ingredients

2 cups carrots
1/2 cup walnuts
2 eggs
1 cup brown sugar
3/4 cup oil
1 teaspoon bicarb soda
1/2 teaspoon vanilla
1 cup plain flour
1/2 teaspoon mixed spice
1/2 teaspoon cooking salt

Method

Lightly chop walnuts (turbo 1 or 2 bursts), remove from thermomix bowl. Add approx 3 carrots (I don't peel) to thermomix bowl and either turbo for 2 or 3 bursts or on speed 4 until chopped. Add walnuts, brown sugar,  and  :-: on speed 3 until mixed. Add eggs, mixed spice, vanilla, salt, oil   :-: speed 3. Slowly add four and bicarb through top of thermomix on  :-: speed 3 until all combined. Approx 5 Min's.  Place into a medium cake tin and cook in oven 180 deg (fan forced) for 60 Min's.

I double the mixture and freeze remaining.

chris do u mean u freeze the batter or a baked cake
i don't need a recipe i'm italian

Freeze baked cake. I cut up and put into individual bags so hubby can take to work for morning tea.  ;D
