Curry splitting

Q>  any ideas out there WHY my curries are splitting...my thought is that I should be adding coconut cream at the end of the cooking process??

I add my coconut cream or milk at the end of cooking and make sure it is not boiled. Smooth curry every time

Hi and welcome to the forum.  Do you put yoghurt in?  This is notorious for splitting if you put it into a boiling mixture.  For coconut cream I would do as Fundj and Bootobethin suggest - maybe even take some of the hot mixture out, stir it into the CC then put the lot back into the jug / pot.

That's what I do Cuilidh and mine never splits. I do it with yogurt  and coconut milk or cream.

Adding some cornflour to the coconut milk before adding it to the dish should alleviate this problem.  I use it when using evaporated milk.
