How many of us have days in the kitchen (or elsewhere) when things do not go plan?

Today decided to make carrot/banana cake as our sweet treat. Bit bored of economy banana cake.

Every week we have one or two past it bananas to use so This week after some good threads on here I thought I'd add in carrots.

Found a recipe and amazingly some chia seeds in the cupboard.
Substituted 1d seeds in water for half the oil, and made a huge mess as I topped up measure with oil and overflowed madly as couldn't see level properly with sun shining on chia gel and oil in same cup. Stupid mistake.

So far not too bad....

Chopped carrots in TMX, added mashed nana, eggs and sugar then remembered that all my spices ginger etc are still packed along with my Baking powder. Ahhhhhh.
Silly me.
Luckily had not added any flour so quickly switched to SR flour and added 1 heaped tsp of proper molasses for added flavour.

Phew in oven now.

Will advise on results  later.

Recipe as should be
3 med carrots blitzed
Add in 2 mashed bananas
1/2 cup oil, ( I substituted 1d chia seeds soaked in water for just over half this)
3 eggs
3/4 cup light brown sugar (or less)
1 and 1/2 cups flour with 2 t BP

Should have cinnamon too and was going to add ginger. So added 1heaped t blackstrap molasses and used SR instead.

Made one ring mould and 6 muffin ones ( no 5  actually as I had to try one while still warm).

Ho yes, I know what you mean.

I organised catering for Local Govt Council meeting today of which I'm also a part of. I forgot completely about dessert so quickly whipped up a recipe that I grabbed from the internet.
The meal was an Indian Curry feast so I wanted to do a coconut and mango dessert.
Mangoes are just coming in and the ones I had turned out to be quite tasteless and sour. then I couldn't buy coconut milk at local shop so bough Admiral brand Lite Coconut Cream (word of advice - don't ever buy it, it's disgusting!!)

Anyway dessert was horrible, but curry feast went off well. I think I'll freeze the coconut and mango desserts and mix with some ice cream.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

DJ,  this looks yummy.  Lucky you are such a good cook and can make the changes.

Well it is ok, and something sweet to eat, but not sure it has the 'feel good' factor on the tongue.
Think it may be one that develops over time.

Will keep you posted. Not wasted anyway that's the main thing.

Ok imagine the scene...
Woken at 6.30 am by very annoying beeping.

DH eventually said might be his electric toothbrush... Causing me to mildly grumble oh DH!

Beeping goes on and on and on, after he moved it.

We get up, we search room, we move the bed, look under the drawers. It takes ages. Bit of grousing going on but can we find this dratted thing?

Eventually I think it might be a phone, a cordless one. We try ringing it, busy tone!

And ages later after we've looked and looked I find it between the top quilt and duvet in the middle of our bed.

What a waste of time and effort was that. About 40 minutes at least!

Hope you can picture the scene! It was really very funny all this patting and prodding and looking in things and under things, but DH didn't think so. He's gone out now so I can have a really good laugh!

I just hope it hadn't dialled out somewhere and the bill will be huge! But I shan't say that!! LOL
