I have been making these cookies for years for my boys - they love them and I'm happy because they are not full of crap. I named them lunchbox cookies because I made them for DS's lunchbox when he started preschool. I've since added crio bru to the mix to get another 'superfood' in there!
Ingredients:
1 egg
150 gram rapadura
125 gram butter
1 tbsp vanilla essence
1/2 cup whole meal flour
3/4 plain flour
1/2 tsp salt
1/2 tsp bicarbonate soda
1/2 cup walnuts (or other nuts) (I use sunflower seeds for nut free)
1/2 cup oats or quinoa flakes
1/2 cup sultanas
3 tsp crio bru
3 tsp chia seeds
Smarties or Choc chips
Method:
Preheat oven to 180°C.
Add egg, sugar, butter and vanilla into the thermomix bowl and mix speed 7 / 20 secs. Scrape down side of bowl.
Add all the other ingredients, except the smarties or choc chips, into the thermomix and knead for 20 secs until just combined. Use the spatula to combine any excess.
Place teaspoons of the mixture onto a baking tray about 5cm apart. Place 5 smarties on the top of each cookie.
Bake for 10-12 mins.

Stella 84 - made these with almond meal and besan flour, still turned out delish! great recipe snappy.
cookie - I wondered about the tablespoon of vanilla but it really adds to the taste. These are truly delicious. I didn't have any smarties so I added a handful of mini choc chips to the mixture. I love them and DH has just had a couple with his afternoon coffee.
Definitely on the make again and again list.

I'm baking these right now, and they smell fantastic!
I've written in red the changes I made, and also just some weights for those who like to just chuck everything in
Ingredients:
1 egg

160g brown sugar
125 gram butter
1 tbsp vanilla essence
1/2 cup whole meal flour -
75g almond meal
3/4 plain flour -
(125g)
1/2 tsp salt -
omitted
1/2 tsp bicarbonate soda
1/2 cup walnuts (or other nuts) (I use sunflower seeds for nut free) -
(75g)
1/2 cup oats or quinoa flakes -
50g quinoa flakes
1/2 cup sultanas -
(80g)
3 tsp crio bru -
15g homemade milo
3 tsp chia seeds -
(15g)
36 Smarties, one for each biscuit
Will report back with the verdict from mum and SD

Could do most of this I think. Cocoa for crio bru maybe?
Need to miss out sultanas for DS though. Maybe choc chips, or mashed banana?
This is what I've made today.
In the oven
And out of oven yummy.
One with leftover braised beef for lunch and one with broth for supper. DS will probably have 3. Will freeze rest and have another day.
This was my sponge and dough method, but the ferment was 48hrs old and gives a subtle sourdough tang too. My family prefer yeasted bread.

DJ, I think the cocoa would be fine instead of crio. I used my own homemade milo with no extra sweetener and they still turned out great
And I'd definitely put the choc chips instead of sultanas. I think mashed banana would make the bikkies too moist
Those rolls look amazing DJ, I can't wait until I master bread making!

Amy they look amazing! I'm glad to hear your mum likes them.
DJ - just omit the crio bru altogether. It was never in my recipe until this year When i bought my first bag. I just added it for its magnesium content - try and sneak vitamins into the kids cookies!
Also, sultanas weren't in my original - it was one cup of Choc chips. I wanted to lower the chocolate content down so I swapped it for half a cup of sultanas, and put smarties on the top.
Yeah I'm one of those people whose always changing their recipes up until I get it the way I want it.

Thanks Snappy! They are such great bikkies and you've stuffed a lot of superfoods into them
And I don't think there is any point sticking to a recipe unless it is exactly what you want
I change all the recipes I cook too!
