Pizza Scrolls

Pizza Scrolls

Converted from Women's Weekly Baking Day Cookbook (thanks Mich :-*) with just a couple of tweaks.

Ingredients:
300g SR flour
1 tbsp caster sugar
30g butter
180ml milk
1/4 cup pizza sauce or tomato paste
2 tsp dried herbs (if using plain tomato paste)
1-2 cups mozzarella cheese, however much you want
100g salami, bacon, ham or other meat (or omit for vegetarian)
A couple of handfuls of other pizza toppings

Method:
1. Preheat oven to 180 degrees. Grease and line a 20cm x 30cm slice pan.
2. Mix flour, sugar and butter for 10 seconds/speed 6. Add milk and mix for a further 10 seconds/speed 6.
3. Knead for 1 minute/interval speed.
4. Turn out onto a floured surface and roll out to a 30cm x 40cm rectangle.
5. Spread with sauce/paste and sprinkle with cheese and other desired pizza toppings.
6. Roll up into a sausage and slice into 8-12 pieces. Place in lined tray and cover with foil.
7. Bake for 40 minutes, check that dough is cooked, then remove foil and allow scrolls to brown for 5 minutes or so.

I used bacon, thinly sliced mushroom and well drained pineapple in my scrolls.

The recipe says to use salami and green capsicum as the main filling ingredients, but you could use anything as long as you don't overload the dough ;)

I have also adjusted the cooking. The recipe does not say to cover the scrolls but since I am still not used to the fan in our new oven I covered them as a precaution. They turned out perfectly the way I have written in the recipe above. The recipe in the book just says to bake them for 30 minutes.
