Onion Nigella Bread

Adapted to TM
Recipe from Spice by Christine Manfield

Ingredients
1 cup caramelised onions, recipe in book, but I used Odettes Onion Jam from Helenes  blog (already had some made)
500g bread flour
1 t salt
2 t nigella seeds, i ddnt have enough so I substituted cumin
20g fresh yeast, i used 2 sachets of dry yeast
1 t sugar
150mls warm water
1/2 cup thick plain yoghurt, room temp
Fine rice flour, didnt use
1 egg yolk, ddnt use

Method for TM, quite different to method in book.

Warm onions in microwave
Flour, salt & nigella seeds into TM
Dissolve yeast & sugar in water, add onions & yoghurt.
Add to dry mix in TM
Knead 5 mins
Let it rise unil mc pops, about 1 hour
Remove from TM
Punch down, divide in to 2
Dust with flour & brush with egg yolk
Bake for 15 mins at 200
Best eaten warm & fresh


I woukd recommend that you measure the onions & yoghurt, I just guessed & might have added a little too much, hence it was very sticky.
I made 1 large loaf as my mix was very sticky (added more flour) & worried that it would spread rather than rise. Cooked for 25 mins.

Next time would divde into 2 as recipe states.

She says  this can be made as bread sticks.

This bread is moist & very moorish.

She recommends eating with spicy food, pickles & chutneys.

We had it with left over chicken curry.

Thank you for sharing this recipe. It sounds and looks divine! I am definately going to try this one. I saw your photos of this bread in the 'other' thread.

I have no idea where to buy nigella seeds. Any help with that please?

I bought mine in a health store, used in Indian cooking, so Indian shops would stock them.

Good one Hally. Also good to see you winging it and not sticking exactly to the recipe as it shows what can be done with imagination and ingunity. It looks perfect.

looks great Hally. How do you think it would go made into small rolls? I'm assuming the dough would need to be a little stiffer.

Thanks for the recipe Hally. Definitely worth a try. I can't resist new breads.

Flavourofthemonth, I bought my Nigella seeds at an Indian grocer too. Just keep them separate as mine developed little grubs after a few months. :'( :'( :'( Or better still put them in the freezer.
May all dairy items in your fridge be of questionable vintage.

I live in rural Victoria and there are no Indian grocers anywhere around here. (smile) I think I'll look online and hope I can get them bug free. He he!  Thanks for the help ladies.

With buying anything like that, even rice, if you put the item in the fridge or freeze for 24 hours you will kill the eggs which then won't hatch into grubs. Common occurance.

Black cumin seeds are a good substitute.

Thanks Hally - looks great!!!!    I have just ordered "Spice" and "stirfry" and they should be in Adelaide for when I get home.  Since being over here I have seen Christine Mansfields India book and have been trying to decide if I will buy it.  Back home it's around $85 here I can get it for $50 but like all her books it's quite large.

Deedub very kinly sent me spice, I had not seen it but heard of it. Its fabulous, I will be working my way through it. For $50
I woud buy the Indian one ;D its gotta be good if they are selling it in India :)

Enjoy the rest  of your trip, sounds amazing, to be invited to a full indian wedding is such a special experience.

Hally,  looks interesting.  Love the flavour of Nigella seeds.  Sometimes called Black Cumin.  I have made Christine's breads in the past and quite like them.  She uses different spices and forms the rolls into interesting shapes.  I like the look of this cut loaf,  but think you are right and have added a little too much yoghurt.  Bet it tastes yummy,  though.

Yes going to make ths again n the near future :)

Breadsticks next time.

Need to buy more nigella seeds, i had to use grund cumin as that was the nearest thing I had.
