750g water
500g peeled potatoes, cut into pieces
4 egg whites
pinch salt
4 egg yolks
400g sugar
50g icing sugar
Place water in
, and potatoes in basket. Program 25 mins Temp Varoma speed 1. Keep aside, wash and dry
(unless you have 2 like me)
Preheat oven to 180º
Grease a cake tin 30cm diameter, or rectangular 30 x 20cm
Place butterfly in clean dry
and add egg whites, pinch salt program 4 mins, speed 3 and 1/2. Place aside too.
Remove butterfly, and without washing
, add egg yolks, sugar and potatoes, mix 10 seconds speed 4. Gently fold this mixture into the egg whites. Pour into dish and bake for 30 to 35 mins. Check with a skewer to see if its ready. Leave to cool down a bit before removing from tin, and sprinkle with icing sugar.
