Choc Chip and Walnut Cakes or Slice

Choc Chip and Walnut Cakes or Slice
Converted from "Mmmm... Baking" ;D

Ingredients:
115g walnuts, chopped in TM to desired consistency
225g butter
175g caster sugar (I used brown sugar to give a caramel flavour)
Splash of vanilla
225g plain flour
200g chocolate chips

Method:
1. Preheat oven to 180 degrees and grease muffin pans or a slice pan.
2. Beat butter and sugar for 1 minute/speed 4. Add vanilla and beat for a further 30 seconds or until combined.
3. Add flour and mix for 30 seconds/speed 4, scrape sides of bowl and mix again until combined.
4. Add walnuts and choc chips, incorporate breifly with spatula, and then mix on reverse + speed 3 until well distributed through mixture.
5. Press mixture into muffin or slice pan and smooth surface. (I filled my muffin moulds right to the top because this mixture has no raising agent.)
6. Bake for 20-25 minutes for a slice, or 25-30 for little cakes because they are thicker. If making a slice, leave to cool completely in pan and then cut. If making little cakes, cool for about 15 minutes in pan and then carefully remove to a wire rack.

Since this recipe is supposed to be cooked as a slice, the little cakes are more biscuity than cakey. They have a nice crunchy outside :)

They look lovely Amy. I like the idea of them as 'muffins'.

Thanks cookie :D The mixture is quite dense, so as 'muffins' you could probably share one between two people ;)

Made these again today, used a star pan this time but the mixture overflowed, so they look like hats for a person with a star-shaped head ;D ;D ;D
