Spiced Nuts from Julie O

SPICED NUTS
Substitute different nuts and spices for the ones suggested if liked.  

1 whole cinnamon stick, broken into pieces
2 star anise
1 whole nutmeg
¼ tsp whole cloves
170g pecans
160g almonds
140g walnuts
50g brown sugar
1 ¼ tsp table salt (I didn't use as much as this)
pinch cayenne pepper
1 large egg white, lightly beaten until frothy

Preheat oven to 160C. Line a rimmed baking tray with baking paper; set aside.

Place the cinnamon, star anise, nutmeg and cloves in a spice grinder.
Pulse a few times and then process until finely ground.
Empty into a large bowl.

Add the sugar, salt and cayenne to the large bowl; toss to combine.
Add the nuts, mix to combine and then add the egg white and mix until all the nuts are coated.
Spread evenly on the prepared tray and place in the preheated oven.
Bake, tossing every 10 minutes, for about 30 to 35 minutes, allow to cool.
Place in a glass container.

Tips/hints from members

Lucyloo - I ground all spices in TMX, no problems. I added pistachios to my nut mix just because I had some.

INAID asked if there was a substitute for egg white for those with allergies. GF responded with

Sounds perfect for Christmas gifts - just putting in an order for a big batch of nuts so will get making this over the weekend. Thanks lots.

Is the recipe for Emsie's yummy nuts on the forum? I've done a search but didn't come up with anything. They were lovely.

Somehow I missed out on her nuts cookie, so I should try and see what everyone was raving about. Little nibbles like this are very handy to have on hand if there are one or three unexpected guests

I wish I could say I had two CP but I didn't . They were really tasty. Just right IYKWIM.

I'd love to make these, but I don't have a spice grinder. Can the TMX do the job do you think?

I don't see why not.
I have just made some spiced nuts using Chookie's KFC mix.. Haven't tasted them yet.

Ground all spices in T-M no problems.
 I added pistachios to my nut mix just because I had some.These are very Moorish, I''LL be lucky if they last to Christmas. Probably won't last the day. Better make some more.

As I said above I used Chookie's KFC spice mix on my nuts. Sadly I have to say that they are all done. They were lovely and we gutsed the lot. I will now have to make some more for friends.

So what quantity did you actually use Cookie.  They must have been delicious if they are were all gone so quickly.

I beat an egg white, dropped the nuts in and stirred. Then I just sprinkled KFC seasoning over and stirred. I just guesstimated, I'm sorry. I have to do some more so will let you know. DH says I'm not to make anymore. I put some macadamia a in and they were wow!

Had a surreal moment on Sunday. DW was helping me in the kitchen to make some rusks while i made these fantastic nuts. For the rusks you roll pieces of dough into balls with oiled hands before popping them into a pan. Well DW took a call from a friend and I overheard the conversation...

Friend: "Hi there, what're you two up to?" DW: "Rob's roasting his nuts and i'm oiling his balls" Surreal or what!!  :o ;D
