I think that the almond meal would definitely add another dimension to these biscuits and is worth a try. I also thought that they would work well as a slice or bar.  I was thinking I could make them in a slice tray and cut them into bars instead of buying muesli bars.

I don't think I have become sensitive to fat. I love the stuff. We don't buy/use anything other than butter. So my thinking with the applesauce was to reduce the fat content a little.

Good idea Den, I think they could work as bars :) And with a bit of tweaking they could probably work as muffins too ;)

Almond meal might be a good thing to use if substituting apple sauce for the butter since the almond meal would add more fat. Might try next week ;D

I agree Delightful Den, next time I would also reduce the sugar a little. Apple Sauce would be a great substitute.

Making these again. This time I have used 25g butter and 25g of fresh EDC applesauce and 50g xylitol instead of sugar. I have also used 100g wholemeal SR flour and 50g almond meal.  The mixture seems moist enough.

I'll let you know how they turn out.

They are a little bit dry and could use a touch more xylitol but are definitely edible.

Hm... I don't know how to solve the dryness without adding extra butter :-\

Yes I still added the honey. Actually the sweetness or lack of it is growing on me.

Banana might be the way to go. I might try more applesauce next time and see if that helps.

Ok so I think that I have got these right now.  I used 25g butter, 30g xylotol, 60g applesauce. I creamed these all together then followed the recipe as above.
