Gourmet Salads

I have friends over sat for lunch, they own a very expensive exclusive butchery & they are brining the meat. No idea what meat. I am making the pull apart from tenninas xmas book, but need ideas on gourmet salads.

My mind is not really in the cooking zone, so ideas please :)

I am doing a cheese platter & making a dip, plus the bread.

Dh said when they arrive he is going to suggest the butcher cooks as dh is not a good bbq man & is worried he might ruin the meat :)

This tandoori chicken salad is our favourite

You can prepare everything in advance and dress salad before serving.
I use tenderloins, and often cook them the night before, and slice up before serving.
 I do add more brown sugar to dressing, so add to taste, and I use pataks tandoori paste.

The changs noodle coleslaw always goes down well, plus the Beetroot, tomato & onion,  green apple slaw, cous cous salad with roast pumpkin. If you want any if these I will email you. Think simple rather than elaborate.

Cream Puff would love the cous cous recipe.

I aso have a pkt of noodles.

Looking at doing a potato & aspargus salad from taste,  http://www.taste.com.au/recipes/20723/potato+and+asparagus+salad

Plus still thinking, it woukd be good to have left overs for sunday as I think dh is going to try the rotisserie.

I do a kumara salad that I alway get asked for the recipe with, would you like that? It is served hot.  :)

The beetroot, pomegranate and pistachio salad from Dani Valent's book In The Mix is spectacular, colourful and easy.  I can PM it to you if you would like.

That kumara salad sounds good, astarra, I would love that recipe if at all possible.

Another idea is to make a good old reliable potato salad, garnish with hard boiled eggs (of course) and tomatoes then present it on top of a bed of rocket or spinach, that has always proven a popular one.

I do a baby spinach, roasted tomatoes, pumpkin and pine nut salad I always get asked for. I made it up and don't worry about measurements but here goes.
- roast halved roma tomatoes for a couple of hours in oven on about 150 degrees until they have collapsed but not dry. Before roasting i sprinkle over brown sugar, thinkly sliced garlic and thyme leaves then drizzle with olive oil and balsamic vinegar. I try to make sure each tomato has some of each on top but I'm not fussy. I also line the tray with baking paper so the oil, balsamic and tomato juice can be used for the dressing.
- roast small pieces of pumpkin until done to your liking
- chop and fry a couple of pieces of bacon (don't always include this)
- toast some pinenuts

Once everthing is cooked it's just a matter of putting the spinach leaves on a plate, then placing the tomatoes and pumpkin on top and then sprinkling over the pinenuts and bacon. I find there is always enough oil and balsamic mixture in the tray from cooking the tomatoes to use as a dressing.

We quite often cook up a lot of tomatoes and leave in the fridge in a container covered in oil and just bring them to room temp before using for the salad.

There's some great salad ideas here. Can we have these recipes under a separate heading please with these recipes such as the cous cous salad, kumaranna salad etc.  :)

Ooh, I can't put this couscous salad up cos its one of Nico Moretti's and he doesn't like his recipes to be put on websites apparently. I'll just PM you as I have done a copy & paste for Maddy.
