How do you do the 2 rises Uni? If you put the dough from the TM bowl into the pot in which you are going to cook it and leave it overnight, do you remove it from the pot in the morning, knock it down, place it back in the pot and let it rise for a couple more hours?Which do you think is better, 1 or 2 rises? If they are the same, what's the point then of doing 2 rises?
