macerating dried fruit for christmas cake.. fridge or bench?
« on: December 12, 2012, 02:58:17 am »
I have been macerating dried fruit in brandy for christmas cake in the fridge, but I really need the fridge space - would it be okay in an airtight container at room temp? I want to leave them for a few more days yet.

I always macerate my Christmas fruit in an airtight container in the pantry for at least 3 weeks. Shouldn't be a problem alcohol kills anything, doesn't it?? ;)

I leave mine on the bench, makes it so easy to taste it each time I walk past, ;D just have to make sure I put extra in so there is enough for the  recipe.

Awesome! Frees up some bench space. I will just have to keep DD1 (who is 6 out of it)... she keeps eyeing off the bits of apricot  ;D

It might help her sleep.

We have always left ours on the bench. It has never gone off yet.

I always leave mine on the bench too then I can stir it or rotate the jar it's in every time I go past.
May all dairy items in your fridge be of questionable vintage.
