Hi everyone,
I am attempting to make Tenina's smoked salmon pancake stack with herbed hollandaise but don't have verjuice. Does anyone know of a good substitute for verjuice?

I would hazard a guess: white wine; a good white wine vinegar; a dry sherry . . . .

Thanks Obbie...think I may have run out of white wine too. I wonder whether watered down lemon juice will do the trick?

Note: Verjuice It is the unfermented juice of semi-ripe grapes, white wine vinegar is a suitable substitute.

I always have a bottle of verjuice in the fridge. Maggie herself said that it will last for ever in the fridge. If I don't have white wine opened I use verjuice. It is a bit expensive but you don't usually use much.

I've often given Verjuice as a gift but have never bought myself a bottle - funny how we do that

Verjuice has been suggested to me to use in cooking as a non-alchoholic version of white wine. However I can't seem to find it at any supermarkets or health shops. Looking at this post, could I use white wine vinegar instead of white wine? And would you use the same amount? i.e. I want to try the Snapper/Trout Di Josie from the EDC which has 200g of white wine. Wondering if 200g of white wine vinegar would give too strong taste? Thanks for any suggestions!

Verjuice has a much more gentle taste than white wine vinegar. Are you able to buy a non alcoholic "white wine" in your supermarket?

Yes I buy mine at the stupid markets (namely either of the big 2) I find it is usually in with the vinegars and oils ... around that section
I didn't know about keeping it in the fridge Cookie ... off to put my bottle in there now!

We were told at a cooking demonstration at Maggie's Kitchen a few years ago. She said it may darken but is ok for a very long time.
