Rainbow Jelly Cake

I just converted my favourite rainbow jelly cake to thermomix...and here it is :)




6 x packets jelly in rainbow colours
6 x teaspoons gelatine
1500 g water
1 tube condensed milk
1 jelly mould, sprayed with olive oil spray then wiped so just a little residue remains.

1. Place 250g water into thermomix bowl, set 2:30/50 deg/speed 2. Pour in 1 tsp gelatine through hole in lid (try to get it to the side so it doesn't end up on top of the blades).

2. Check that the gelatine is dissolved, then put in purple jelly and set to 5:30/50 deg/speed 2. Again, check that it's all dissolved.

3. Pour 3/4 cup of the mixture into the jelly mould and set in the fridge until it is almost set (should be slightly tacky when you touch it - around 30 min).

4.  Place remaining mixture in a small container (I use a drinking glass) and stir in a dessert spoon if condensed milk.

5.  Carefully pour the creamy layer over the first layer and put in fridge to set.

6. Repeat with the blue, green, yellow, orange and red layers. It will take less time to set with each layer.

7. Leave to set overnight and when you are ready to serve, dip the mould into a sink of hot water for around 20 sec then invert onto a plate, it will take a little bit but the jelly should come out. If nothing happens, dip it in the water for a little longer.

It is!! And possibly even bigger with the adults!  I'm in the middle of making one for my work Christmas party tomorrow and it's so time consuming, but well worth it :)

That looks sensational alf - I'm sure my grandkids would love that.  What's the apple in the background - a cake?  Looks fabulous too.

I had lots of help from my parents to make the apple cake, there's no way I could have done it without their input!
