Cheesy Nut Loaf

Cheesy Nut Loaf

INGREDIENTS
340gms of mixed nuts
100gms tasty cheese
1 medium onion chopped in quarters
1 medium green capsicum roughly chopped
1 medium tomato chopped
1 medium carrot cut in quarters
Tbsp oil
1 cup of cooked brown rice (about 1/3 cup uncooked)
1 egg

METHOD

* Place nuts in  *: and process sp 6 for 5 secs or until very fine - set aside
* Place cheese in  *: and grate sp 6 for 8 secs - set aside
*Place onion, capsicum and carrot in  *: and chop sp 6 for 5 secs
*Add tomato and oil to the onion mix and saute at 70 for 5 mins sp 1  :-:
*Add the remaining ingredients and mix sp 7 for 10 secs or until mixture just comes together.
*Press mixture into a lightly greased loaf pan with the base lined with baking paper.
*Bake in a moderate oven for 40mins or until lightly browned.

This looks really yummy Michelle. Would you serve it with relish or chutney? Or as a side dish?

Definitely needs a nice chutney or relish. Good cold too for a picnic.

I served this as part of a buffet lunch with roast meats etc and my brother said "love the stuffing Mich".  :-)) so it would probably make a nice stuffing for roast chicken and meat as well.

I would say 6 people if serving with salad or vegies.

Tried this tonight, added a teaspoon of mustard powder and salt & pepper, served with tomato relish and salad, DH and I both enjoyed, I found it very filling and only ate one and half slices. We have got some for lunch tmw and will freeze the rest

Will add the mustard powder next time Rainbow - it is very filling and freezes well. I have some in the freezer too.
