Hello everyone,
As the title suggests I've been reading this forum for ages, drooling over what could possibly be made in the thermomix and leaving pages open on the iPad so that dh could see what could be made - he's a sucker for sweet stuff. There was some pretty blatant hints being dropped. I'd first been to a demo 3 years ago and it was love at first site but we couldn't justify it. But on christmas eve afternoon whilst the kitchen was a disaster zone for the next day, a lovely consultant brought my new baby round and showed me the basics including custard. It was an amazing christmas/birthday present from dh. It's been very exciting am looking forward to cooking up a storm for family, especially our six month old daughter. I've tried a few things below and it's all been delicious except for a few things I've commented. Hopefully people can steer me in the right direction and I can contribute a few recipes of my own.
Shalini
Leek roulade mix
Sweet potato mash
Simple white rolls for oyster po boys
Neil Perry's prawn marinade
Vanilla custard
Turkey risotto
Spinach and mushroom quiche filling
Christmas ham, sweet potato and leek quiche filling
Chocolate custard
Orange, macadamia and ginger biscotti (based on Tenina's recipe)
Shortcrust pastry - but it shrunk so much couldn't use it
Some juices
Coffee frappe - I think the timing was off as there was no ice left
Garlic and herb pull apart
Carrot cake
Banana bread
Chicken and sweetcorn soup - yummy but ended up cloudy :-(
Cous cous and veg patties for bubs - next time will add more cous cous
The paste for butter chicken and will do butter chicken tonight :-)

Hi Cuddle_cook - welcome to the forum! What a lovely Christmas/birthday gift - and you're certainly off to a flying start! I'm sure others with more experience in the dishes you mentioned a problem with will be able to help you out. But in the meantime, it's tally ho!!

Sounds like you are off to a flying start.
I'm certainly no pastry expert, but I happened to be watching something last night, and the cook recommended after mixing the dough to then chill it again before rolling to help prevent shrinkage. Also rolling it over your rolling pin to lift it onto the pie dish - lifting from the edges will cause stretching that will then pull back in later.
Not sure if that's any help, but nice to think my random channel surfing last night could come in handy!
I love the TMX for preparing foods for the kids - you know exactly what's in it, and they see the process of it being made. I'm sure it will bring your whole family lots of joy - certainly plenty of yummy sweet recipes on here to keep you DH happy

Hi Shalini, welcome to the forum with your lovely story. Your lovely DH was probably planning this gift for some time and the wait is certainly worth it. You will have to let us know your birth date so that I can put you in my book for next year. You've certainly done some nice recipes and if you did refrigerate the shortcrust pastry before rolling it and it still shrank, then I have no answer for that one. Some pastry cooks on here may be able to shed some light on the problem though.
The coffee frappe recipe I presume you mean the one from Quick Fix in the Thermomix book? Have you read the reviews of this recipe

? If you are wanting some ice in your frappe, I would just add some after you have poured the mixture into serving glasses. If blocks are too big, just blitz some for a short time to break it up - keep an eye on it
Not sure how to prevent cloudy sweetcorn & chicken soup - I love the stuff no matter how it looks
Looking forward to your recipe contributions - it's always nice to see new members posting recipes.

Welcome to the forum Shalini, you are doing really well with the cooking, the wonderful things the Thermomix helps to create are endless. I can only agree with the girls regarding your pastry, let it rest, did you bake it blind before putting in the filling, if so remember to cover the pastry and fill with rice or baking beans otherwise it puffs up to much in the centre to use.
