Cherry Fruit Mince

Cherry Fruit Mince
Ingredients
1 cup cherries, pitted and chopped
½ cup currants
1/4 cup prunes, chopped
1/4 cup sultanas
1/4 cup mixed peel
100g dark brown sugar
3 teaspoons mixed spice ( I didn't use this much)
2 tablespoons unsalted butter
1/4 cup cherry brandy
1 orange, zested and juiced
Preparation
Place cherries, dried fruits, peel and spice into a large bowl.
Put the butter.sugar,cherry brandy, juice and zest in the bowl.
Speed 1, 1000C. Set time for about 7-8 minutes. Leave the MC off.
When the temperature is reached, remove the bowl and pour the contents over the fruit. Cover with glad wrap and allow to cool.

I cut this from the paper and believe it is a recipe from Ed Halmagyi.
My fruit mince is still quite liquid, so I will have to perhaps boil some of the liquid off. Will do this next time.

Probably. Either this or the non fat fruit mince Mum used to make.

Have got this on at the moment and will need to invest in a cherry pipper if to make it again. Hope it thickens up.

You may need to add some cornflour or leave some juice behind. It is rather liquid.

This is divine; I put it all in tmx for a few minutes on reverse to reduce liquid a bit. Will make some special little fruit mince pies because SIL loves them. Thanks Cookie for the recipe.

cookie this looks very nice but i love your nanas one.   i used cranberries instead of raisins.  lovely, not too sweet and no fat

I like this but do prefer Mum's recipe too. Unfortunately I haven't been able to make this so far this year, so I did the cherry one.
