Pearsall's Nana's Creamiest Rice Pudding

Name of Recipe: Nana's creamiest rice pudding  
Number of People: 8 serves at least

Ingredients:

200g arborio rice
750mls skim milk
3 Tbspns butter
55g sugar
380g can evaporated skim milk
300mls lite cream
Nutmeg & butter for top

Preparation
Place milk, evaporated milk and sugar into TM bowl.
Heat 8 mins/90o/speed 1/MC off.
Add the rice and cook 30 mins/90o/reverse/speed 2/MC off.  Check after this time and cook a further 5 mins if needed.
Add the cream.  Mix for 30 sec/speed 2/reverse.
Leave sit in the TM bowl for 15 minutes.
Pour into a large casserole dish, grate frozen butter over the top and sprinkle with freshly ground nutmeg.
Place under the grill until golden brown on top.

Tips/Hints:

When first made this pudding will be quite liquidy but after refrigeration it becomes thicker and creamier.
I put the grater in the freezer as well as the butter - grating butter works better when everything is really cold.

I left out the first amount of butter in the recipe because I used full fat cream - JD.

Thx jd.. My dh gran makes a delish rice pudding.. Only full cream though.. Will have to try this ..

What a start Pearsal. Welcome indeed. Thank you JD. A "Must try" for those in my family who luv these traditional recipes. Reminds me of my Nana.

I thought of your DH when I was making this Cookie - love to hear what he thinks of this recipe seeing as he is a connoisseur of rice pudding.
