Ok this may or may not exist in my fridge at the moment.
Baileys Cheesecake (no bake)

I kind of dont follow recipes...

Here's
a recipe for Bailey's cheesecake for all those wanting to make one. Don't know if it is the same one as mentioned above.
I have this one in my Philly cookbook if anyone is interested - this is the one I would make.
Serves 10
1.25 cups sweet biscuit crumbs & 80g melted butter - mix & press into base of greased 20cm springform pan and chill.
Filling
500g philly block cream cheese, softened
3/4 cup castor sugar
2 tbspns coffee liqueur eg baileys
3 tsp gelatine dissolved in 1/4 cup boiling water
2 tspn instant coffee dissolved in 1 tbspn boiling water
1 cup cream, lightly whipped
double cream to serve
chocolate curls to decorate
Beat the philly and sugar until smooth. Add the coffee liqueur, gelatine and coffee and beat until well combined then gently fold in the whipped cream.
Pour into the prepared base and refrigerate 3 hours or until set. Slice the cheesecake, top with dollops of cream and chocolate curls.

I've just made 1/3 quantity of JD's recipe (but the full amount of Baileys😀😀😀😀).
I omitted the gelatine because I've put it into individual glasses so it doesn't need to set as such. Mmmmm looking forward to dessert tonight!
Only took about 5 minutes to put together - just what I don't need a quick easy Baileys Cheesecake.

This is the best and easiest no bake Baileys cheesecake EVER:

6 butternut snap cookies or other plain sweet cookie
1/3C baileys
200g (7oz) ricotta
250g (9oz) philidelphia cream cheese
1/3C (60g or 2oz) icing sugar (powdered sugar)
Just wizz the baileys, cheeses and sugar a few seconds on speed 3, pour on a muffin tin lined with muffin papers on top of the cookies and allow a few hours on the fridge to set. I'm not a big fan of philadelphia cheese, so whenever a recipe calls for it, I just replace it with mascarpone.
It's delicious!!
