Rockmelon, lemon & gin slushies

 These are the quantities for 4 but I only made 1 glass for myself.

Night before - Cut 500g rockmelon into 2-3cm dice, lay flat on a tray and freeze overnight.  Next morning place the frozen cubes into a ziplock bag.

Also, make the syrup the night before as well - Combine 70g castor sugar and 70mls water in the TM bowl and cook for 2 mins/100o/speed 1.  Pour into a mug, add the thinly peeled rind of 1/2 a lemon, allow to cool and refrigerate overnight. Next morning strain to remove the lemon rind.

When you are ready to make the cocktail, place 100 ml gin, 100 ml lemon juice, the strained sugar syrup and the frozen rockmelon and blend on speed 10 until smooth.  You may have to do it in 2 batches if you are doing full quantity.

For 1 glass I used - 125 g frozen rockmelon
                             25 ml gin
                             25 ml lemon juice
                             30 ml sugar syrup  - it was a little too sweet so try 15ml and add more if needed.
                             I blended for 1 min/speed 10.
                             Pour into a glass, decorate with lemon and serve immediately.

Just so happens I had some left over sliced up rockmelon in the fridge.  Now it's in the freezer, off to make the sugar syrup.......now this is my kind of recipe :D

Ooh - I do like the sound of this - wish I had the ingredients on hand but will rectify that tomorrow.

I'm going to try vodka instead of gin next time - I still have some sugar syrup and frozen rockmelon so there will be a next time ;)
