Crunchy Chicken Nuggets:Makes about 30 :Ingredients:150g quinoa flakes
160g corn flakes
500g chicken mince or make your own
2 eggs
2 tablespoons parsley
1/3 cup EVOO
Preparation:Drop parsley onto blades, speed 7 for 3-4 seconds. Set aside.
Put quinoa and cornflakes into bowl, mix 4 seconds,
, speed 4. Or if you wish to crush them a bit don't use
Set aside.
If using chicken breasts, cut into pieces and mince speed 5 , 10 seconds.
Add eggs, parsley, and 2/3 cup of the quinoa mix. Mix at speed 4-5 , 10 seconds.
Roll the chicken mixture into nugget shapes and coat with the remainder of the cornflake mix
Refrigerate for at least 15 minutes to set.
Heat oil and cook, turning once.
Photos: Tips/Hints:These are converted from the latest Australian Women's Weekly. I made them slightly larger than nuggets. They need to be served with a dipping sauce, I used Gentleman's relish, sweet chilli sauce and some Beetroot relish I had. We had them with vegetables too.
