Pickles like Rosella brand?

Hey everyone,

As the thread title says, I'm looking for a recipe for pickles that are similar to Rosella's. If anyone can help out I'd be really grateful

We always called it cauliflower pickle. I know the CWA book has a recipe for it. Ill check.

whenever we would go to a fête I always  used to buy a jar of cauliflower pickle that the older ladies would make,  would love a recipe  too

Sweet Mustard Pickles

Women's Weekly - Preserves
Store pickle in a cool dark place for at least three weeks before opening. Refrigerate after opening.

Yield: 9 cups

140 g coarse cooking salt
500 ml boiling water
1 liter cold water
500 g cauliflower , chopped coarsely
4 medium brown onions, chopped coarsely (approx 600g)
2 lebanese cucumbers , unpeeled, chopped coarsely (approx 260g)
750 ml cider vinegar
440 g white sugar
1 tablespoon mustard powder
1 teaspoon curry powder
1 teaspoon turmeric
50 g cornflour
2 tablespoons water

Directions :

Combine salt and the boiling water in large non-metallic bowl, stir until salt dissolves. Add the cold water. Add vegetables, mix well. Cover with a large plate or a sealed plastic bag half-filled wiith water to keep vegetables submerged, stand overnight.
Rinse and drain vegetables well, drain on absorbent paper.
Combine vegetables, vinegar, sugar and spices in large saucepan, stir over high heat, without boiling until sugar dissolves. Bring to the boil. Reduce heat, simmer uncovered about 10 minutes or until vegetables are tender.
Blend cornflour with water in a small jug until smooth, add to pan, cook stirirng until mixture boils and thickens.
Spoon hot pickle into sterilised jars, seal immediately. Label and date jars when cold.

The photo looks good....I'm going to grab the ingredients tomorrow on the way home from work and give it a go...I have almost finished my last jar of mango relish so I'll have this instead.  There is a nice looking recipe in that cookbook for a corn relish which I may just have to make as well.

sounds perfect, does anyone know what a vinegar proof lid is?

Anything except plain metal lids Suzanne.  Plastic lids or the metal ones with a rubber lining .
