McMich's Raspberry Tart biscuits

 Michele posted this elsewhere so here it is folks - we don't want to lose it ;D

The recipe is the one that came with the biscuit cutter. I did a bit of a conversion so I can just weigh straight into the thermomix next time.

125g butter
100g castor sugar
1 egg
1/2tsp vanilla bean paste/extract
280g plain flour sifted
40g desicated coconut
raspberry jam

Preheat oven to 180
Mix butter, sugar and egg sp 6 for 15 seconds
Add flour, coconut and vanilla bean paste,  corn knead for 4 minutes
Wrap in cling wrap and refrigerate for 30 mins
Roll out between 2 sheets of baking paper until 3mm thick
Cut into shapes and bake for approx 10 mins
Cool, spread half with jam top with remaining biscuits and dust with vanilla sugar.

Bakers Secret Cutters - come with the basic shape and several middle cut outs.
I didn't really post - Judy took my very rough home conversion - just so I could weigh straight into the thermomix next time.

Think you add a big cob of corn and mix for 4 minutes, or it could be a new hip hop dance move  ;)
