It's a huge loaf and I suggest you halve these quantities
as it is probably too much for the TM bowl.
190g cold mashed potato -
95 g
2 eggs
1 egg
100g butter, softened
50g
1 tsp salt
1/2 tsp
2.5 tsp dry yeast
1.25 tsp
180g warm water
95g
790g bread flour
395g
Place mashed potatoes, eggs and butter into the TM bowl and mix
10 sec/speed 5, scrape down sides and repeat.
Add salt, yeast (in a different place to the salt), warm water and flour & mix
2 sec/speed 5.
Knead 5.5 minutes.
4 mins
Remove dough onto a silpat mat and knead by hand for 30 seconds. Form into a ball, spray all over with olive oil and place in a bowl covered with a tea towel in a warm spot for 1 hour. (I put it outside in the sun)
Punch the dough down, place back into the TM bowl and knead again for
2 mins
.
Form the dough into a freeform loaf, place it on a lined tray, slash the top 3 times, spray with water and cover with sprayed gladwrap and leave to rise until it has doubled in size (this only took 30 minutes in our heat today).
Preheat oven to 200
o
C fan forced.
I brushed the top with eggwash before placing in the oven on one of the lower racks.
Bake 25-30 minutes - I checked mine with a thermometer and it took just under 30 minutes to reach the 200
o
F needed.
Place on a wire rack to cool.

I imagine this would taste nice, I might make .1/2 tomorrow , did you use the potatoes warm or cold?.

Mashed potatoes are a key ingredient in Boston Buns (which I love!) so I can imagine this bread would taste delicious JD!

Thanks girls, I really liked it and it is the easiest loaf I've ever sliced. All sliced evenly (for me that is something
) and in the freezer only kept out enough for a sandwich for tea and a couple of slices for toast for my breakfast in the morning.

Thanks to the egg wash CC - the recipe said to use water but I had egg wash leftover from the cream horns and was glad about that when I saw the cooked loaf.

I made this today, using the half quantities. I was making potato salad, so kept some of the potato aside for this recipe.
I didn't put my dough back into the bowl after the first rise to knead it for 2 minutes, as I'd already washed the bowl and I was cooking something else by that time. I punched the dough down and kneaded it a bit by hand.
It turned out lovely. Thanks for the recipe Judy!

I had a really large organic egg, so I kept some of it when I made the dough and did an egg wash as Judy suggested.
It tastes lovely Judy. Richard had 2 slices with his dinner.
I had to find a JD recipe to make for the challenge!
