Zucchini & Potato Soup

Name of Recipe: Zucchini & Potato Soup converted from my Breville wizz stick manual.
Number of People: 4-6 serves

Ingredients:
1 leek cut in halves lengthways then into 5cm pieces. 
1 tbspn olive oil
1/2 tsp Tenina's garlic paste
300g potatoes, peeled & diced approx. 2cm
600g zucchini, sliced 2cm
1 litre chicken stock
100mls cream mixed with 1 tbspn cornflour
S & P to taste
Parsley to decorate

Preparation:
Place the cut leek into the TM bowl and chop 2 sec/speed 5.
Add the oil and sauté 5 mins/varoma temp/speed 1.
Add the garlic paste, potatoes, zucchini and chicken stock and cook 30 mins/100o/speed 1.
Blend 30 sec/speed 6. Have the MC in place but for your own safety, do not hold it down. The steam needs to be able to freely escape.
Add S & P to taste plus the cream and cornflour mixture, stirring it initially into the liquid with a spatula then blending 30 sec/90o/speed 4.
The soup will thicken more once allowed to rest and cool.
Serve with a dollop of cream and a sprinkle of parsley.

Judy that looks so special in that bowl, with the cream and parsley. I love the sound of the soup too.
May all dairy items in your fridge be of questionable vintage.
