Aunt Bea's Chicken

Ingredients

2-3 boneless skinless chicken breasts
2 eggs
bread crumbs
oil for frying

Cauliflower and/or Broccoli
1 tin condensed Cream of Chicken soup
1/2 cup mayonnaise
1/2 cup milk

Method
Cut cauliflower/broccoli into florets  and par cook. I usually steam mine.  Do not over cook, you just want to get them started.

Trim fat and yucky bits from chicken breasts and slice into medium sized peices. Egg and crumb chicken then brown lightly in oil. It doesn't really need to be pre cooked at all but it looks more appetizing

Layer veggies in the bottom of a rectangular baking dish and top with the crumbed chicken

Add cream of chicken soup, mayo and milk to a bowl and whisk together. Pour over top chicken and Veggies.

Bake at 200 degrees for 40 minutes.

Notes
Be careful not to over cook the veggie or you will end up with mush. Quantities of chicken and veggies will depend on size of your dish and the number of people.

I don't know who Aunt Bea is. She is not one of my relations.

DD,  this looks very tasty.  I think Aunt Bea was American,  looking at the recipe.

DD this looks nice and easy, for a one pot meal is there enough liquid to add a spud or two?

AB it depends on the size of your baking dish and how much chicken and other veggies you use. I used 3 chicken breast 3/4 of a cauliflower and a medium head of broccoli last night. There was not much sauce left.  I served it with boiled potatoes on the side but it could be served over rice.

Chookie, Aunt Bea was definitely American.  Many of my mothers recipes use tinned or packaged ingredients. I think this one came from a camping club or PTA (P&C) fundraiser cookbook.

That is a great idea Judy, good thinking I never buy canned soups but have some SOS  In a jar in the cupboard.

DD, inspired by this recipe,  and having 2 cups of cooked  turkey over,  I made a version of this.   The crumbs went on the top and I used SOS mixture.   Thanks for getting me moving.  Will post recipe as it is different enough.
