slices and bisciut that keep well

l am helping the school with some catering for a function

because l work l will need to make it one week ahead of time

what slices and biscuits will keep nice for that  long  .

the school has a big freezer and can freeze them

we also need to individual wrap each piece   

any ideas would be great , thank you so much

I make muffins and freeze well.

I also make a chocolate slice and ice, that will keep for  week.

Its a basic recipe and you can add nuts, dates, fruit, change it around. I make it every weekend.

Melting moments dough can last for ages in the fridge.  They are best cooked about 2 days before though - so you could make the dough and just bake one night during the week.  I often use the dough and put smarties on top and make the big smartie cookies - kids love them.

Almost any biscuit will freeze. I'd do a few traditional ones like Anzacs and Afghans for people who remember them. Jam drops are good too, coloured meringues are good too and they only need to be kept in an air tight container.
May all dairy items in your fridge be of questionable vintage.

cookie  do you freeze cooked biscuits or just the uncooked  dough

I freeze cooked biscuits. Not with icing though and I wouldn't freeze jam drops either.

My basic slice recipe

2 cups of SR flour
2 cups of coconut
2 cups of sugar

1 cup of melted butter

mix, bake for 30-35 minutes in a slice tin 180*

variations.

I add chopped dates, mixed spices,  and do a lemon icing
chopped apricots or sultanas, with lemon icing
cocoa and make a chocolate icing.

If adding fruit, or nuts, add 1 cup of fruit. :)

in our household when l bake biscuits there gone almost straight away eaten by  my hubby and kids
