GF Potato pizza dough

This is taken from the German GF booklet. I tried it yesterday and it turned out like pizza topping on mashed potato. I obviously did something wrong, but maybe yours will turn out better.

Ingredients:

Dough

600g water
650g floury, unpeeled potatoes
75g potato starch
1 egg
1 tbsp olive oil
1/2 tsp oregano
1 tsp salt
2 pinches pepper

1) Pour water into jug, put potatoes in basket and cook 30M/Varoma/speed 1. Allow the potatoes to cool - overnight is best - and peel.
2) Put starch, egg, oregano, salt and pepper into the jug.
3) Press the cold potatoes through a "Spätzle press" (or grate them coarsely, as I did) and add to jug. Mix ingredients 30s/ :-:/speed 3, using the spatula if necessary.
4) Grease a pizza baking dish (28-30cm) or spread onto a baking tray that has been covered with greaseproof paper. Press down the dough.

Topping:

100g Edam cheese
1 onion, halved
1 clove of garlic
20g olive oil
1 tin of tomatoes (400g), drained of juice
1/2 tsp salt
1/4 tsp pepper
1 pinch of sugar
1 tsp oregano

1) Grate cheese 4s/speed 6. Fill into another bowl.
2) Chop onion and garlic in the jug 3s/speed 5.
3) Add oil and cook 3m/Varoma/speed 1.
4) Add tomatoes and chop 5s/speed 5.
5) Add salt, pepper, sugar and oregano and reduce 8m/Varoma/speed 1. Allow to cool slightly before you spread it over the pizza dough.
6) Sprinkle cheese over the top and bake in pre-heated oven.

Temperature: 200C
Baking time: 40 minutes

Yes, it sounds great, but like I said, I wasn't impressed. Maybe I misread something. I thought it would be a bit like an unrisen bread dough, but it wasn't. Sauce was good though :-))

oops i missed your comment! but yes, when you read the recipe it does sounds like it would be a bit mash like lol

We are going to do GF pizza bases this week.  Will let you know how they turn out and if the recipe is any better  :)

Not really a pizza base.  You could easily make a dough with GF flour and yeast and then add the potato like foccacie from Puglia.

Thanks for the tip, Thermomixer.

I don't think I have a gluten allergy but I just feel better when I don't eat that much wheat (is that a contradiction?). I'm using the GF booklet to extend my cooking/baking repertoire so that I use other grains apart from wheat and spelt without buying GF flour. For example, I would never have thought of using flour made from corn to make Spätzle if I hadn't read the TMX recipe. They probably taste "heartier" than the usual wheat-based ones. And I really want to try out a few recipes that incorporate rice flour. Cooking with the TMX definitely makes you try out new things :D

Having a great forum for sharing ideas and recipes really makes me thjink about different foods that I would probably never have tried.
