What are you cooking for Mother's Day?

I can't believe its nearly here already, and I've hardly thought about what I'm going to cook
I have an idea for dessert: I'm going to try making chocolate cases with cheesecake mixture in them. I'm hoping to post the recipe if they work. But I have no idea what to cook for a main course
What is everyone else cooking, or having cooked for them?

My DD is having me and her in-laws for lunch so I told her I'd love to help her out - it would get me back into the kitchen for a good cookup.
I'm making a Vienna loaf, EDC beetroot salad, Chicken parmigiana bake (non-TMX recipe) and Peaches & Cream dessert from the forum.

It's Mother's Day so it will be DH and the DS that will be cooking for me on Sunday. Truth be known, we'll probably end up at one of the restaurants at Burswood.

I got it from a magazine Amy - Australian Table which I don't think exists now. As luck would have it though, I found the exact recipe for you online
here
. I love that it can be made ahead and just reheated when needed.

That does sound great Judy. Must try.
Auskick super clinic for us on Mother's Day. So mum is doing the cooking for lunch. Think it's different flavoured quiches and salad. I will make a dessert, but not sure what yet. Any thoughts Amy?

I would do cookie pops for the dessert Kimmy, maybe a few different flavours and decorations
Or caramel tarts using buttersnap biscuits, caramel top 'n' fill, and melted chocolate
Or chocolates, like CC's peanut butter bon bons
Or all three

Thinking something a little healthier and less chocolaty. Still getting over Easter and birthday cakes
will go through the books and forum tomorrow. Something will pop up.

I'm making the Spanish rice pudding it is to die for I put a teaspoon of vanilla in it instead of lemon absolutely delicious cold too.

Thanks JD, my DS would love the parmigiana recipe - he has just discovered the joys of a Chicken Schnitzel Parmigiana at our local pub, kids eat free on Sundays, we have been a couple of times in the last few months.

I need some help too. My brother has kindly invited all the family to lunch for roast lamb, and I am on salad duty. I am looking for a salad recipe that I can prepare the night before as we are doing the Mothers Day Classic walk in the morning. I was thinking of a brown rice salad, but will need another salad. Any suggestions?
PS please don't suggest the beetroot salad as it is one of the few things I don't like:(
