Pumpkin, Zucchini and Bacon Soup

Serves 4

1 onion peeled and quartered
300 g of bacon roughly cut into chunks
1 tbsp oil or butter
450g of pumpkin peeled and cubed
200g of zucchini cubed
1 tbsp of TM Vegetable Stock
500 g of water
1 tsp of chopped garlic  paste
pinch of sugar

Place onion into TM bowl and chop for 5 seconds on speed 7
Add butter or oil and bacon and saute for 3 mins at 100 degrees on speed 1
Remove half of the bacon
Add pumpkin and zucchini and chop for 15 seconds on speed 7
Add Vegetable stock, water, sugar, and garlic and cook for 20 mins at 100 degrees on speed 1
Blend for 10 secs on speed 9
Add remaining bacon.

Note: I used jar garlic but you could use fresh garlic adding it when you chop in onion.

Chardie18 - It's delicious.

McMich - was "souper" nice. Very welcome on a rainy, chilly night.

This sounds really delicious.  I don't have the ingredients for it in the caravan but if it stays cool I will buy them and make some. Otherwise I will do it when I get home. Thanks.

If she knows it's her DD's recipe Den, maybe she will eat it  ;D

Good one inskiwinski - soup weather is on the horizon although it is very warm for May here in Adelaide these past 2 days.

I am a new thermomix owner and also this is my first message.  I am keen to try this soup, but must admit I am unsure of one of

the instructions.  The recipe states "remove half of the bacon".  Do you do this so you can use it as a garnish, or is there a step

missing in the recipe.  All help appreciated.  Suzi

I haven't made this one myself,  but I think I would add the removed bacon back in the last minute or so of cooking so that it heats through. I suspect it is removed so that it doesn't break down too much and will add some texture at the end :)

The soup is blended at the end though Jamberie so I wouldn't add it back until after that step.  Maybe it is just for garnishing.

Thank you, Jamberie,
I think I will add it right at the end.  I appreciate the prompt replies.

I made this but missed the step about taking half the bacon out. Ijust left it all in and blended it in at the end.  I think that Jamberie has got the right idea. Take out half and add it back in after you blend the soup so that you have chunks of bacon in the finished soup.

Oh d€¥>€~>   I went into Denham today and forgot to buy zucchini for this recipe. I will ask around and see if anyone is going in tomorrow and can get me some. It is cloudy here although not cold so I may need soup.
