I'm not sure if this is the correct place to post this. I just took delivery of my Thermomix today. I'm so excited. I made the stock from the EDC with my consultant. I now want to make pumpkin risotto. Do I just change the swap the mushrooms for pumpkin and use the recipe from the EDC? I don't want to stuff up the first thing I make.

I've only ever roasted my pumpkin and then stirred it through at the end hopefully someone can help ;D

What I've done in the past is to make the risotto but omit the mushrooms .. At the end after putting it into the thermoserver over a bed of baby spinach, I stirred in small bite sized pieces of butternut pumpkin which have already been given a very light coating of olive oil and a little freshly ground pepper and roasted in the oven. You coul add small cubes of fetta

I have added diced pumpkin with the onion at the beginning and then cooked the rice .  the pumpkin mashes in as it cooks.  I then  fold more roasted pumpkin in at the end.
I think you are a bit brave to adapt a recipe first off.  I had a couple of goes to get the risotto just right. There has always been a lot of discussion about how much liquid to add.  I always keep a bit extra to add at the end if needed.

Thanks for everyone's advice. I can't believe how quickly all of you reply on this forum so much so that I didn't come back prior to attempting it.

I ended up adapting it. I know someone said that I'd be brave to do it as a newbie but I thought I had nothing to lose. I ended up doing the pumpkin with the onion and garlic and it turned out really well. My family loved it.

I will try some of the other suggestions on here next time.

Yes,  well done.   You are going to have a great time with your  TMX.  When I  make the mushroom risotto  I add some dries porcini to give a Flavour kick.
