Broccoli, Fennel & Leek Soup - Surprisingly Yummy

Name of Recipe:
Broccoli, Fennel & Leek Soup (adapted to Thermomix from Lose Baby Weight Winter Plan)
Number of People:
4
Ingredients:
1 leek, roughly cut
1 large fennel bulb, halved and roughly cut
2 cloves garlic, peeled
1 tablespoon coconut oil
½ broccoli (250g), cut into small florets
½ cauliflower (250g), cut into small florets
1L chicken/vegetable stock or 4 tablespoons vege stock concentrate + 1L water
Sea salt, to taste
Pepper, to taste
To serve:
Sour cream
Mountain or other bread
Preparation:
Place garlic, fennel, garlic cloves and coconut oil into TMX bowl. Chop for
3 seconds – Speed 7
and remove any really large pieces.
Add coconut oil and cook for
5 minutes - 90C - Speed 1
until veges are soft.
Add broccoli and cauliflower florets, then add stock, salt and pepper. Cook for
12 minutes – 100c – Speed 1.
Blend by slowly increasing from
Speed 1 to speed to 9 over 30 seconds and then continuing to blend at Speed 9 for 30 seconds.
Serve in bowls. Season to taste. Top with sour cream and serve bread on side.

This photo is actually when I cooked it on the stove top and blended it in the TMX (not the best photo) but it was creamier using that method.
Tips/Hints:
You can use olive oil instead of coconut oil. I have started using coconut oil as it has a higher smoking point.
This is a quick, healthy and easy soup to make. The name alone turned me off but I tried it after reading on Facebook that someone else tried and liked it and though I would do the same. Surprisingly, it's really yummy!

I'm not a calorie counter myself but the recipe says 253 calories per serve

I used this recipe as a guide to make a Broccoli and Cauliflower soup. Main ingredients were obviously Broccy and Cauli, I added a leek and 3 small potatoes. I cooked the leek in some chili oil and garlic and then followed the rest of the directions. It looks great and I hope OH will like it. I don't really like soup, I want to but I just can't eat it.

That's a shame you don't like soup Crompo, I know others who never eat it either but at least you cook it for your OH. I hope he enjoys it.

I'm finding that I don't like this soup when cooked in the Thermomix - not sure if my conversion should be different but it definitely tasted yummy when cooked traditionally and then blended in the TMX. Would be interested to see what others think?

I haven't made this soup Tasty.DH doesn't like fennel so it wouldn't be on my "to do list" Hopefully another member will be able to comment on the cooking method and taste for you.

CC I don't like fennel either but you can't notice it in this soup or it doesn't seem to bother me.

Cooking right now. Was looking for something other than potato and leek soup for my leek, then found leak and broccoli soup (with potato) and then ended up discovering this option which will utilize the huge fennel that I could't resist yesterday. Lunch for the week I hope.

I added parsley and basil at the end as per the leek and broccoli soup recommendation. I'm finding it hard to adjust to the salt in the veggie concentrate. I'll be reducing the salt content I the next veggie stock.
