One thing I like about this book is that I often have all the ingredients on hand or it uses ingredients that can be substituted quite easily.

I used 1/2 a brown and 1/2 a red onion, 1/2 tsp garlic paste as well as the fresh clove of garlic, used bought liquid stock, frozen corn and added 1/2 tsp salt & 1/8th tspn white pepper at the end with the cream. I did cook the soup for an extra 5 minutes.

I really enjoyed this soup, the coriander and prawn garnish finished it off nicely.  It would be nice for a dinner party entrée for big kids  ;D

Made this today. Used vege stock (from the book) instead of chicken stock as needed it kinda vegan. Omitted the cream as had to be dairy free too.

I found it rather mild/bland and probably needs extra flavour for adults - extra salt does the trick and the drizzle of oil.

I do agree with Judy in that the prawns go well with it but if using the frozen smaller variety - cook more.
