Vegetable Pasta Sauce review page 204 Baby & Toddler book

I made this last night to go with the Beef & Zucchini meatballs on page 157 which I cooked today (review here).  It makes heaps and is quite thick, especially if not used straightaway so it could be thinned down if you want a runnier sauce.  A perfect accompaniment to the meatballs and GS had no idea Grandma was getting some vegetables into him today.

Yes he ate the lot girls, no complaints from him.  I sent the leftovers home for their tea - he would eat meatballs until the cows came home.

I made this tonight so hubby could have it for lunch tomorrow with his pasta. Unlike you Judy, I found this to be quite runny (as you can see in the photos).

Very simple and quick to make. The only thing I struggled with was fitting all the veges in the bowl for chopping so I had to fit as much as I could. Chop a little and then add the remainder.

I had a quick taste and it was nice but salt would bring the flavour out more.

I made this vegie pasta sauce on Sunday as I wanted something quick and easy to make that was packed with vegies. No kids in this house so I added salt, chilli and cayenne pepper.

I also struggled to get all the veg in the bowl, so I did what Tasty did and chopped half first and then added the rest. My sauce wasn't overly thick, but a nice consistency. It certainly makes heaps.

My DH used it last night to make a quick dinner for us - adding extra vegies, tuna and served it with pasta. Normally he would use a jar of pasta sauce when making a meal like this, so it was great to have healthily home made veggie packed sauce instead of the jar. It was very tasty.
