Shepherds Pie Potatoes

Name of Recipe: Shepherds Pie Potatoes tweaked & converted from a recipe in the Legacy News.
Number of People: 4 serves
Ingredients:

4 large potatoes
35g cheddar cheese, cubed
10g parmesan cheese, cubed
1 large onion, peeled and cut into quarters
1 large clove of garlic or 1/2 tsp Tenina's garlic paste
15ml olive oil
300g mince meat
1 tsp Worcestershire sauce
100mls liquid beef stock
1 tblspn tomato paste
1 tblspn gravox mixed with a little water (use cornflour if you don't have gravox)
heaped tspn butter
small quantity hot milk

Preparation:

Preheat oven to 180oC, fan forced.
Wash, dry and prick the potatoes and bake until crisp on the outside and soft on the inside - 1 hour - 1 hr 15 mins depending on the size of them.
Grate the cheeses 5 sec/speed 9 and set aside.
Chop the onion and garlic 2 sec/speed 5.
Add olive oil and sauté 4 mins/varoma/reverse/speed 1/ MC off.
Add mince and sauté 5 mins/100o/reverse/speed 1/MC off.
Add Worcestershire sauce, tomato paste and liquid stock.
Cook 10 mins/100o/reverse/speed 1/MC off, adding the thickening mixture in the last minute if needed.

Whilst the filling is cooking, cut the baked potatoes in half lengthways, remove the flesh but leave at least 2mm to ensure the skin stays intact. Mash the potato with the butter, S & P and enough hot milk to make the potato spoonable.

When the filling is cooked, fill the empty potato shells (to almost the top), top with the mashed potato and sprinkle with the reserved cheeses.

Bake 15 - 20 mins/180oC fan forced or until the topping has browned.  

Tips/Hints:

The filling may fill more potatoes, it will depend on how large the potatoes are.
For adults, you can spice up the mince mixture with chillies, curry pastes etc - just add when sautéing the onion.

Thanks Judy - my DH will love this one too!  Maybe this should be in the "mains" section rather than the babies and kids, since there are so many DH's who will like this  :D :D ;)

Yummo, I am going to make Shepherds pie tomorrow, so I think I might put some spuds in the oven and use some of the mix for these and they can go in the freezer for another day. Thanks for the idea Judy

So glad you tried them CC, they taste even better the next day or even the day after that  ;D  Doesn't sound as if they would last that long in your house though.

I think these would be great using baby chat potatoes, fiddly perhaps but for party finger food they'd go down a treat and could be made well in advance.

I made these tonight and they are just awesome! thanks so much! also as the hubby pointed out they are budget friendly
