Lemon Cordial Concentrate

This recipe came from a very good friend of mine, Susan, who found this handwritten recipe in her grandmothers recipe book when she was cleaning out her home after she had died (I have converted it into metric though)

Juice of 4 lemons
Grated rind of 2 lemons
700g white sugar
750ml boiling water
30g tartaric acid (available in supermarkets in cooking section, with the bicarb and baking powder)

Dissolve the sugar in the boiling water.  May need to keep heating it on the cooktop, stirring, until all dissolved.
Add other ingredients.
Allow to cool.
Strain.  Bottle.
Keep in fridge.
Add water to dilute it to taste.

Thanks for this Karen I used to to make something very similar when my kids were young I might make some I have heaps of lemons.

Yes i used to make it when mine were young also. Thanks for the timely reminder as i have heaps of lemons at the mo.

I have made something similar before and loved it. I need to smile sweetly at the neighbours for more lemons.  ;)
May all dairy items in your fridge be of questionable vintage.

Smiling won't get me anywhere with mine Cookie, their tree hardly has any lemons on it at the moment.  It has been supplying me for years but I really have to search for 1 now.  We've had good rains so far this winter so hopefully it will fruit bigger and better with the next crop.

A lemon tree is on my shopping list... My next door neighbour became so disgusted with the attacks from the sulphur crested cockatoos that he pulled his two citrus trees out! :(  The cockatoos would bite off the fruit and then drop it on our driveway ... I might opt for a dwarf variety on a pot on the verandah...

I have a lots of lemons tree and can highly reccomend. The fruit is so juicy the skin thin and always plenty. Do have to feed regularly in the pot though.

Karen,  thanks. For this recipe.  Like many others,  I made this recipe a long time ago.  My DS now makes it.  I am going to try a low cal version,  might even add a little fresh ginger.
