Chickpea and Sausage casserole

Chickpea and Sausage
Serves 4

2 tablespoons olive oil
2 garlic cloves
1 medium red onion quartered
1 red capsicum roughly chopped
200g sliced mushrooms
400g can diced Tomatoes
400g lean beef or chicken sausage
400g can Chickpeas, drained and rinsed
Salt and pepper, herbs if you have any

Place onion and garlic in bowl chop 5 secs speed 5
Add capsicum chop 5 secs speed 5
Add sliced mushrooms
Add oil and cook 100 speed 1 for 2 mins
Add tin tomatoes and cook 100 for 10 mins  reverse
Meanwhile cook sausage on stove top and slice into bite size pieces
Add sausage to sauce and cook 5 to 6 min on 100 Reverse speed 1
Add drained chickpeas and cook 2 mins 100 R speed 1

Add salt and pepper or herbs with the chickpeas

This recipe is from my weight watchers magazine, really enjoyed it and very easy to make

ES - it was delicious. I added a button squash, smoked paprika and a pinch of Chilli with the onion, garlic and capsicum. I used plain pork sausages and I served it with couscous with parsley and chicken stock. My family will happily eat this again. Thanks for an easy dinner. I cooked it in my ThermoChef at 90C with the butterfly in as I don't have a reverse function.

I've never made this. Thanks ES it looks very appetising. I will have to go over to my favourite butcher and get some of his lovely sausages.
