G'day! I am VERY new to Thermomix but have been doing A LOT of research, have attended the WONDERFUL Cooking with Varoma (which I shared the experience on my blog)
I had my first Thermomix Play Date (which I also shared) and in September, I will be loaned a Thermomix to see what recipes I can make, create and back based on my specific food lifestyle.
I don't see a lot of recipes that use Xyltiol which is part of my food lifestyle. Stevia is way to sweet for me. Natvia does not break down in most recipes like the company's Xylitol I use.
I will be looking to learn more and sharing my experiences along the way, but would love to see if anyone here uses recipes made with Xylitol. I did see Jo uses it rarely.
I cannot use dates, figs, honey, agar agar as sweeteners. I limit white potato, rice, etc., so it should be a great challenge for me!

I eat very similarly to you, although I do use Stevia, & I don't eat potatoes. I'm always on the lookout for recipes that match my eating plan! It nice to have another 'kindred eater' here
