FRUIT MINCE SLICE

QUICK FRUIT MINCE SLICE
Base:- 100g chilled butter
1/2 cup brown sugar
1 cup plain flour
Topping:- 1 cup brown sugar
1/4 cup plain flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup desiccated coconut
2 large eggs
1 teaspoon vanilla
280-300g fruit mince (either homemade or store brought)
Heat oven to 160c (fanforce 150C). Line a slice pan (approx 18x28cm) with baking paper
Place base ingredients into TM and process for about 5 secs speed 4 , until it is crumbly. Tip this mixture into pan and press down so that it covers base evenly. I use a glass to press mixture down. Bake for 10 mins.
Place all dry ingredients into unwashed TM and mix for 3-4 secs on speed 4 to mix well. Add eggs,vanilla and fruit mince and mix on speed 4 till well blended - approx another 5 secs. Pour on top of the base and bake for 30 mins, until centre of topping feels firm and has browned evenly.
Cool thoroughly before cutting into squares.

Yum Trudy. This looks wonderful. I've printed it and must make it. A good excuse to make some more fruit mince, it doesn't last long in this family.

What is a slice pan?
Is fruit mince what Americans call mince meat - apples and raisins cooked together for a pie filling ?

Agpest, a slice pan is a shallow pan that measures about 7 inches by 11 inches.
Fruit mince does consist of lots of dried fruits and often has an apple base. So your mince meat sounds about right.
Here we use mince meat to make hamburgers and spaghetti bolognaise etc.

I have at last got around to making this. It has just come out of the oven and smells divine and the tiny bit I pinched tastes lovely. I would prefer to make it with home made fruit mince as the bought had lots of liquid in it. Next time will make some fruit mince first, good excuse to make some more.

May I haven't made my fruit mince yet so I used bought for this recipe.
Just after I got my TMX I converted my Mum's fruit mince slice recipe and posted it.

I'm not very computer literate so I hope that's done correctly. It's called Nan's Fruit Mince. It was done in my early TMX days so it could possibly be adapted. It is fat free.

I made this today to use up a jar of fruit mince. I had the base in the oven baking and then realised I didn't have any coconut, which didn't matter because I don't use coconut anyway, but I didn't have any LSA either, which is what I usually substitute for it. So I ground up some pecans and buckwheat and used that instead
It turned out lovely and moist, and it made the house smell absolutely delicious. I'll definitely be making this again, thank trudy

This looks divine. I love the idea of fruit mince but not keen on the citrus peel chunks but it looks like the thermie has taken care of that. Will have to go buy some fruit mince! Thanks for bringing this one to our attention Amy.
