Recipe Review - Asian Chicken Bites - Baby & Toddler Book
« on: August 16, 2013, 03:02:30 pm »
Made these today for my toddler and she loved them. She has been pretty good at eating lately and flavours like these don't bother her as long as we're eating the same thing too.

Very simple, just blitz and fry.

Quite taste and as with most things in this book and for toddlers, you do need to add a bit of salt to bring out the flavours.

Great for party food too although will have to make at least a double batch.

Thanks Tasty, they look great! I haven't looked at the recipe yet, does it have an Asian flavour?
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

It's been a while since I made these so can't quite remember. I think they were pretty mild though.

We had these for dinner tonight, with Tenina's Vietnamese salad dressing as a dipping sauce.

I added some chilli, extra herbs - basil & mint along with the coriander that's in the recipe, and a bit of salt and pepper. I made the mixture earlier in the day and placed it into the fridge to firm up a bit. I coated my bites in panko breadcrumbs before frying (as I have a Costco size packet of panko and I can't let an opportunity to use some go by!).

They were really delicious.

Those panko crumbs are great Katie and I'm sure the extra herbs added to the flavour as well.

Thanks for the review Katie.  I had forgotten that I had tagged these to make awhile back.  Will follow your ideas!

After reading Katie's earlier review I pretty much did what she noted in her post.

I firstly made the Vietnamese dressing, poured it out to a small bowl, but didn't scrape out the TM bowl (a bit of extra flavour going into the balls).

I then made the chicken bites; adding a little seeded fresh chilli, fresh mint and basil and ground black pepper.  Put the mixture into a bowl and refrigerated until roughly 30 mins before cooking them.
I rolled into golf ball sized balls and rolled in breadcrumbs and refrigerated again for about 30 mins uncovered.  Shallow fried in a little peanut oil and served with the dipping sauce on the side and a light salad.

My DH absolutely loved all the fresh flavours and so did I.  Will be making these again, just as I've stated.  Thanks Katie for giving me this idea, they go together so well.  :D
