Basil and Spinach Pesto - old EDC - p.52

I didn't think there was nearly enough Parmesan cheese in this recipe and I had great difficulty weighing the basil leaves.  I blitzed the leaves of a whole bunch but the scales hardly reacted.  We enjoyed the adjusted recipe on toast for a snack but I think it would have been even better on pasta as a light meal.

I had forgotten about the old review!  Tried this last night, trying to stick to the recipe but once again finding myself short of basil.  Still, it was very well received at the function to which I took it, with one lady begging to take what was left home.  :)

Cecilia, I see the recipe in the new EDC has less garlic but still calls for 4 sprigs of basil - somewhere along the line I had altered that in the old EDC to read 250g.  Obviously very big sprigs if 4 weigh 250g ???
